Greek Chicken Bowl

A bright, protein-packed lunch bowl loaded with Mediterranean flavours. Meal-prep friendly — make a batch on Sunday!

Ingredients

  • 2 chicken breasts, diced
  • 1 tsp olive oil
  • 1 tsp dried oregano, garlic powder, salt
  • 1 cup cooked rice or quinoa
  • Cherry tomatoes, cucumber, red onion, kalamata olives
  • Tzatziki sauce to serve

Instructions

  1. Toss chicken with olive oil and spices. Cook in a hot skillet 6–8 minutes until golden and cooked through.
  2. Divide rice between bowls. Top with chicken, vegetables, and olives.
  3. Drizzle generously with tzatziki and serve.
